2018 is in full swing and most people have got their resolutions. One of the most common is a resolution to eat better, and it's one that you may share. If you're trying to eat better in the new year, but you're worried that you'll run out of good recipes to work with, here are a couple more that you can add to your cookbook.

Gnocchi with Parsley Brown Butter

This delicious and healthy dish takes less than 15 minutes to prepare from start to finish.

What you'll need:

  • 1 pound fresh gnocchi (or frozen if fresh is unavailable)
  • 2 tablespoons butter
  • 1 pound zucchini - sliced length-wise thinly
  • 1 pound cherry tomatoes - halved
  • 2 shallots - chopped
  • 1/2 cup grated parmesan cheese
  • 1/2 cup fresh parsley - chopped
  • salt and pepper

Cooking instructions:

  1. Bring water to a boil in a large saucepan.
  2. Stir in the gnocchi and cook for 3-5 minutes. Remove and drain them once they start to float.
  3. In a large skillet, melt 2 tablespoons of butter on medium-high heat until it starts to brown.
  4. Saute the zucchini and shallots until soft.
  5. Stir in cherry tomatoes and salt and pepper to taste. Continue cooking - while stirring often - until the tomatoes are soft.
  6. Add the parsley and parmesan to the skillet, then stir in the gnocchi and serve.

Five-Minute Tuna-Broccoli Salad

Mix this salad up as a main course or bring it to share at a potluck -- it's guaranteed to be a hit.

What you'll need:

  • 2 cups broccoli cole slaw (dry)
  • 1 pouch white albacore tuna in water (2.6 ounces)
  • 2 tablespoons sesame ginger dressing (low-fat if available)
  • 1/2 apple - chopped

Cooking instructions:

  1. Mix the broccoli cole slaw, tuna and apple chunks together in a medium bowl.
  2. Add the sesame ginger dressing and toss until evenly mixed.
  3. Serve and enjoy.
